Anybody ever hear of no-bake cookies? Every morning when I'm home I stop by the local gas station for coffee, cigerettes, donuts, etc...On Saturday morning there were No-Bake cookies on the counter for $.25 each. I got four and immediately got hooked. I've been eating 8 every day since and the results have already started to show. Any idea what's in them? I hope its nothing illegal!!! All I can say is that they are good. It might be my substitute for donuts going forward.

I am a big fan of these too, here you go.
INGREDIENTS:
* 2 cups white sugar
* 1/4 cup unsweetened cocoa powder
* 1/2 cup milk
* 1/2 cup margarine
* 1 teaspoon vanilla extract
* 1 pinch salt
* 1/2 cup peanut butter
* 3 cups quick cooking oats
DIRECTIONS:
1. In a saucepan over medium heat, combine the sugar, cocoa, milk and margarine. Bring to a boil, stirring occasionally. Boil for 1 minute, then remove from heat and stir in the vanilla, salt, peanut butter and oats.
2. Drop by rounded spoonfuls onto waxed paper. Allow cookies to cool for at least 1 hour. Store in an airtight container.

Jamie, what do they taste like when you're all said and done? Sort of a chocolate oatmeal cookie? Give me a hint. I think I'm into it, but I just can't quite get my head around the finished product.

Hmmms... well sort of. The peanut butter makes the cookies very rich. They are very sweet, but have a little teenie bit of saltiness. I am terrible at description, but I find that most people who try them end up eating the whole batch at once - very addictive. Oh.. maybe like a sweet Reeses Cup Oatmeal cookie?
I haven't made any in a long time, but we started making them in Home Ec class in high school. The recipe above was the highest rated one from allrecipes.com. I have used it and it is mostly the same recipe wherever you look. Happy Cookie-ing.

I love these. I make a half batch whenever I'm craving something sweet and have nothing in the house because I always have the ingredients around for these guys. And I convince myself they're not all bad for me 'cuz of the oatmeal. The tough part is not eating them all before they set up a bit. And the great part is cleaning out the pan with a spoon after you're done.
those are my downfall!

Thanks for the recipe, Jamie! I have a question though...I love no bake cookies, but mine are always too moist...they don't dry up and adhere correctly...have you tried this recipe yourself? Anyone else have this problem?

I have that problem sometimes too, Rip. Sometimes it is environmental, sometimes it is something I have done. What I have found to work is to wait until the mixture comes to a rapid boil and then boil it for about 1.5 minutes to 2 minutes. I usually go to 2. Some people say they boil to 5, but this makes it too crumble for me. So now, I go by sight and the timer. I can tell when it is about where it needs to be. Oh.. yes this is the recipe I use. There are a whole bunch at www.allrecipes.com. Just put "no-bake cookies" in the search box. I love that site because they have reviews and helpful tips about what has worked and what hasn't. Hope that helps.

I just now made a half batch and they're setting up just fine. Here's exactly what I did:
Melted 1/2 stick of salted butter (not margerine)
Added 1 1/2 tablespoons of Herseys cocoa
Added 1/4 cup milk (my milk is skim)
Added 1 cup white sugar
Brought it to a rolling boil and let it boil exactly one minute.
Took it off heat, added 1/4 cup peanut butter and 1/2 teaspoon vanilla. Mixed thoroughly so PB was melted and then added 1 3/4 cups old fashioned oatmeal (not instant).
Yum, they're good (cleaning out the pot with a spoon).
Note: I used to make them with instant/quick cooking oatmeal and they never set up as well. I think using Old Fashioned oatmeal is the difference why they always turn out so well for me (and the fact that I add more oats than called for in the recipe). I also don't add the pinch of salt. Not sure if that makes a difference or not.
Wonder if they could be made with a mix of Stevia and Splenda...
Oh, hell, I'm probably better off not trying them at all if they're that good. :D

I don't know about the Stevia, Tina... but I have made them with replacing some of the sugar with Splenda and they were fine to me. I do eat a LOT of Splenda though so I think I have grown oblivious to the difference.
Michelle, good point about the oats. I wonder if that has made a difference with mine too. I went and looked and ours are the old-fashioned Quakers, so I may have used those too. I am not very good with details. :rolleyes:

No-bake cookies are super yummy. I remember I used to make them when I was a kid. Hmmmm. . .gonna have to pull out that recipe again.

AM I all can say is these are my FAVORITE cookies of ALL TIMES
they totally melt in your mouth.. they are so yummy chocolatly.. and i prefer to add creamy peanut butter.. some ppl prefer the crunchy kind.. i love the smooth texture so that's my preference
pure heaven :D
(and I'm not even a big chocolate fan)
