Bacon and bleu cheese sandwiches are divine. I like my bacon crispy to the point it's almost carbon. The best part of a school trip I went on when I was 14 was the breakfast buffet. Forget the eggs, eveyone ran to grab the bacon. Of course it's full of nitrates but this brand is organic and nitrate free:

MissT I have GOT to agree with you!
There is nothing quite like the crispy-fat, crunchy, meaty, salty goodness of bacon!!
I also like the Applegate Farms brand, as well as Niman Ranch.
I read about a restaurant that made bacon cookies and they sounded really good! Sometime I will post a recipe I have for potato salad that is to die for (or maybe from??) that uses a pound of bacon and the bacon fat!

Okay, your photo inspired me. I need an automatic bacon dispenser. I usually cook the bacon in the oven so I don't have to deal with the mess afterwards.

I made a pototo salad this summer with Bacon and dill pickle relish that was as close to heaven as I have ever eaten.

I had a few bad days (at the office) this spring, and all I remember from that time is an intense need for bacon. Just an out and out mania for the stuff. Now, I like bacon ok, but I tend not to eat it for a variety of reasons. But my mind was having none of that during this stressful time. I told a colleague of my desperation and one look at my face let him know how serious I was--he literally escorted me out of the office in search of bacon. I credit him with saving my life (well, my day at least)!

My 93 year old grandfather has kept kosher his entire life, a sacrifice I can't even imagine. Never, ever to consume any shellfish, cheeseburgers, non-Kosher wine or pig products of any kind. I asked him recently if - if - he was to ever break the covenant what he would do it with, and he didn't even hesitate for a second: Bacon. Also, guess the first thing my dad ate when he moved out of my grandfather's house at age 17...

Here a few bacon recipes, remember it makes veggies more palatable, that's if you hate vegetables:
Bacon Turnip Mash
INGREDIENTS:
2 pounds orange turnip
3 tablespoons butter
1 pinch salt
1 pinch ground black pepper
1 dash garlic powder
1/2 pound bacon - cooked and crumbled
2 tablespoons rendered bacon fat
DIRECTIONS:
Peel and cube the turnip. Cook in a saucepan in salted water until very tender. Drain then mash with the butter or margarine, salt, pepper and garlic powder to taste. Set aside.
In a skillet fry the bacon until nice and crispy. Remove from the skillet and crumble. Reserve 2 tablespoons of the bacon grease.
To the skillet with the 2 tablespoons of bacon grease add the mashed turnip and crumpled bacon. Stir and heat to the desired temperature before serving.
Jasmine's Brussel Sprouts (from allrecipes.com)
NGREDIENTS:
3 cups water
1 pound Brussels sprouts, trimmed
2 tablespoons olive oil
2 cloves garlic, minced
8 ounces pancetta bacon, diced
1 teaspoon salt
1 teaspoon ground black pepper
DIRECTIONS:
Bring the water to a boil in a large saucepan. Add Brussels sprouts, and cook for 5 to 7 minutes. They should still be slightly firm. Drain, and rinse with cold water. Slice the sprouts in half, and set aside.
Heat one tablespoon of olive oil in a large skillet over medium-high heat. Add the garlic and pancetta; cook and stir for about 5 minutes, until garlic is lightly browned. Add the remaining olive oil and Brussels sprouts. Reduce the heat to medium and cook, stirring until the sprouts are well coated with the flavor. Season with salt and pepper, and cook for 5 more minutes before serving.

Bacon Apple Cheddar Bake
1 pound bacon, fried crisp, crumbled
3 cups sliced apples
2 tablespoons sugar
2 cups shredded cheddar
2 cups biscuit mix
1/2 teaspoon salt
2 cups milk
5 jumbo eggs
Mix apples and sugar. Layer in large pan in rows. Cover apples with cheese. Sprinkle with bacon. Beat remaining ingredients together.
pour mixture evenly over apples, cheese and bacon.
Bake at 375 F for 35 -40 minutes till lightly browned. Serve Warm.
Yum! ;)
Or there's... hmmm... Twice Baked Bacon & Apple Potato
or Baked Potato Soup with Bacon & Onion ~ Add sour cream on top!

Bacon has always been a food of the Gods, but now monotheists have reason to rejoice too. Recent research has uncovered documentation of the Lord enjoying bacon DURING the days of Creation and even before. ("Hast thou committed baconry before me!?") :mad:
And the Shroud of Turin....you're gonna tell me those aren't bacon grease stains?

While I am a fan of pork roll (Taylor Ham), I don't consider it in the same league as bacon. Perhaps it has elevated to that level for you, since you don't have access to it like you used to? I think really good cheesesteaks would elevate to that level for me, if I were to leave this area.
This past weekend I introduced my BF to a "Taylor Ham and Cheese" sandwich because...well, because he was here in NJ and he had to have the experience!

When I was going to Morristown High School (Class of '71), there was a deli on the same block as the school. I used to eat there a lot because we had open campus and the cafeteria food sucked. I used to get the same thing every time, because it was one of the cheapest things on the menu - a Taylor Ham sandwich on a toasted hard roll with American Cheese. Back in '68, it would set me back a whole 55 cents. Add a bag of Cheeze Doodles and a Coke, and you had lunch for under a buck.....

At brunch buffets I like to sink my tongs way deep into the tangled wad of crispy bacon and pretend I'm gonna drop the whole load onto my plate. (I get obnoxiously giddy around so much food.)
In reality, I keep it to two or three strips. And one off my companion's plate.

My god, Bacon, is truly the food of the gods. At one point i was vegetarian for a few years, that was THE thing I missed most. I don't do the nitrate thing, SO, Trader Joes brand bacon, uncured and no nitirates are to die for !!! We cook 2 packages of bacon everytime we have it! If we have bacon and eggs for breakfast, it's always two packs for me and the hubs and the kid. Oooooo, has anyone tried peanut butter and bacon sandwiches??? These are killer!

Ah Mr Zitkus - I grew up in the Garden State and couldn't agree more. Now it's available here in Seattle!!
Few things are better than a taylor ham egg and cheese sandwich on a kaiser roll!!!

When I was very poor (many years ago, now I'm just regular poor) a friend and I once exited a hoity-toity art opening that was about to happen, pronto, with a giant wheel of cheese under my jacket.

No, he didn't love it (but he isn't a foodee like us). He liked it, though, I think. We also had hot dogs and hamburgers over the weekend. Do you think I am influenced by this board????

Any respectable diner or deli will offer Taylor Ham sandwiches. Or you can buy it in any supermarket in NJ.

From what I understand they dont have it even in all of NJ. Like Very south Jersey, The Jersey shore area has them, At least down to Seaside. AND yes most any diner in NNJ you can find taylor ham or pork roll .... SAME stuff.

I think the board maybe getting to me too, Randi. This morning for brunch we had buckwheat pancakes and bacon. I haven't had bacon in like a year, so it was pretty tasty. We tried the Applewood uncured kind and I have to say I give it the thumbs up. *very tasty*
