Default Once a month cooking/make ahead meals

Do you make things ahead of time? Freeze meals for future use?

Please share your favorite freezer/make ahead recipes!

My family does that a lot, and so do some cook friends that I have. They have 2 big chest freezers and they're FULL of frozen-for-later meals. Helps when a random guest arrives, cuz you've always got something ready if they're hungry.

I especially like when they've made cabbage rolls and pasta dishes. It's kind of the easiest stuff to freeze and re-heat when needed.

I freeze alot of soups, chili, sauces, stews...basically saucy stuff, because those recipes usually make alot with no extra work.

I also mix spinach, corn, peppers, onions, garlic, teriyaki and herbs and seasoning into ground turkey (w/ egg and bread crumbs) for turkey burgers. The added ingredients mean each pack of turkey nets 6-8 big burgers so I freeze the extra, and it works great.

Usually I freeze because I dont want more than a day of leftovers, but if I'm doing it to save time in the future, but don't know what I'll want to eat I freeze basics to be mixed and matched. Examples:

-poached and shredded chicken breast
-cooked brown rice
-cut up vegetables for stirfry
-pesto

I like reading cooking blogs and trying new things so don't have a regular rotation of meals, though I think OAMC is easier if you do.

I bulk-cook once a week or so. Usually it's something like chili, or a stew, or casserole of some kind. I take the leftovers to work because they are generally better than the cafeteria food.
