I tend to use sour cream and mustard as my base. I add cucumbers and green onions to it. I also add loads of green olives to my helping.

I tend towards the German style making a dressing using bacon, celery, onion, sweet pickle, cider vinegar, chicken stock, paprika, yellow mustard, kosher salt and pepper; brought to a boil and poured over the hot diced yellow potatoes and chilled.

I received a marriage proposal (he was kidding, I think) for my potato salad one time. Mine is a hybrid of my mom's and one of my aunt's recipes, and that is all I can tell you about it. My aunt wouldn't give me her recipe until I promised it would never leave the family, and I've kept my vow. So if you want it, you really would have to marry me.

Jackie just whipped up a batch of potato salad yesterday.

She put in onions, celery, kosher dill pickles (diced of course), boiled eggs, shredded cheddar, salt and pepper, with a base of mayonnaise. Yummers!

Mayonnaise, whole-grain mustard and chives. I think that's pretty much the UK way, give or take the mustard. And only ever with halved new potatoes.

Mine crosses a few of the catogries so I put other

(just a note Kraft Miracle Whip here is a really creamy delish mayo)


Mum's (cause this is where I learned this) Tato Salad

Boiled potatoes cut into chunks

hard boiled eggs mashed up with a fork you sort of want a mix of chunky and some bits that will blend in

Diced Bacon lightly fried

shallots sliced up (I think you call them spring onions? the long green ones that come in a bunch or you can use thinly sliced onion)

1-2 jars of Miracle Whip


Mix it all together while the potatoes are still warm

and then put in the fridge if you can leave this alone for a day or two it is so much better the next day

I struggle with that as its so good and not something I make very often its basically a meal in itself and I have been known to eat it as such

but I really dont make it very often.

This recipe comes from the Joy of Cooking:
2 lbs. red or other waxy potatoes, boiled and diced (or is it diced and boiled?)
Whisk in a small bowl:
6 tablespoons red wine vinegar
1 shallot, minced (or 1 red onion, minced)
2 tablespoons minced fresh parsley
2 tablespoons capers, drained
1 tablespoon whole grain mustard
1 tablespoon minced tarragon, mint, dill or thyme
kosher salt and ground black pepper to taste
Add in a slow steady stream, whisking constantly:
6 tablespoons olive oil

Pour dressing over warm potatoes, toss gently to combine and serve warm, or chilled.

Chipotle potato salad:

I make two modifications to the recipe. 1.) I add a tablespoon or two of the adobo sauce from the peppers for extra heat and flavor. 2.) I use chopped cilantro instead of the parsley, and less than 1/2 cup (more like 1/4 cup) since cilantro has a stronger flavor than parsley.

The recipe says to serve at room temperature, but I've had it warm and chilled too, and it's all good.

I was going to say this is untrue of my Nana since she's doesn't cook, but then I remembered the one and only dish she ever makes for family gatherings is potato salad! And it's awesome! The whole family loves Nana's potato salad!

Since I've had multiple versions of potato salad, I have to say I enjoy making Julia Child's. Of course, it's the classic French version, but it's still good.

Wow, Gingembre's is similar to mine, but yours sounds magnificent! My mouth won't stop watering haha. I am definitely going to make this. I wonder what the UK nearest equivalent to miracle whip is though.

Wow, Gingembre's is similar to mine, but yours sounds magnificent! My mouth won't stop watering haha. I am definitely going to make this. I wonder what the UK nearest equivalent to miracle whip is though.
There really isn't one. Miracle Whip is it's own beast. Salad cream is close in flavor, but the consistency is different.

I never realized Miracle Whip inspired such loyalty! I grew up on the stuff, and I think of it as being to mayonnaise approximately what Velveeta is to sharp cheddar. But love it or hate it, you CAN substitute mayonnaise or salad cream for it in a potato salad.

Looooove The Whip. Mom always bought it cause Dad grew up on it (she doesn't eat it or mayo). Her tuna macaroni salad wouldn't be the same without it.

To me, Miracle Whip has its place and so does regular mayo. I have friends who would never buy Miracle Whip, for some sort of snobbery reasons, who love when I make my taco dip with it instead of regular mayo. Just adds a certain tang that you don't get with mayo.

I'd advise googling homemade MW recipes... but then I did it myself and was rather disgusted by the photo that came with the first recipe.
