Default diabetic baking

My hubs is a newly diagnosed diabetic and my birthday is next week. I want to make something he can enjoy that won't spike him too much. I though some if you seasoned cooks might have some good recipes or links that could be helpful. I was thinking if trying out almond flour. Costco had a huge bag of it for a decent price. Any suggestions are welcome.

Megan I know that there are loads of sites like taste.com.au and such where you can do a search and even better people score the recipe and give reviews, I dont have my folder on me atm but I also got given another site (again aussie) called swapitdontstop it or some such.

I will see what links are in my folder and get back to you, you could also look up raw food (There is an amazing avacodo chocolate mousse that looks delish)
