I love to cook...If I had a choice in the matter, I'd send Rachel Ray packing and take over her entire show!
I started cooking young, helping mom out in the kitchen with whatever I could. I remember one time I helped her make cookies and she left for a minute. She came back to see me digging into the flour bowl eating it just like that! Needless to say, she got pictures. But anyway...We always cooked bland meals for my stepdad because he believed that anything icky tasting was good for you. Not true. We had our own meats and veggies from living on a farm. It's sad now that I think about it though, we had all of that that could have been turned into some wonderful meals! I knew this woman, Raven, who was a wonderful cook. She's inspired me to do the cooking that I do now. It's a sad thing that she isnt alive today...She had a lot to share and teach... But anyway, after moving to Pittsburgh, away from home and my stepdad's rules, I started cooking the way I wanted to. Experimenting and all of that stuff. I've discovered a lot of nifty recipes that I personally love. Food has never tasted better! And I always keep Raven's cooking ideas in mind. But...the actual point of this is to ask about and even to share some personal or just favorite recipes. I'm sure that you guys do have recipes that you love! I have some that I wouldnt mind sharing with you guys. *Sauce has -lots- of flavor, so be careful with your amount! Should serve about 4 average portions. Orange Sauce and Pasta: My Recipe 2C Orange juice w/most pulp 1C Italian dressing 1 Tomato 1 small Onion (tennis ball sized) 1 Apple 1/2 small can of pineapple chunks 1 Pound pork (or other meat) ½ Box or more of Bowtie/Farfalle Pasta (or other, depending on what you like) Finely chop/grate apple slices. Cut pork to bite size pieces. Combine OJ, Dressing, Apple, Pineapple, Onion and Meat in frying pan (Medium-high heat) and cook until slightly thickened. (Still drippy) Boil water and add Pasta. Add your Tomato and continue cooking until thick like Alfredo sauce. Drain pasta when done. Serve with the Orange Meat Sauce over pasta. ~If sauce seems too thick for your liking, just add a little more orange juice, or if it is too strong tasting, add a little water and stir. ----------------------------- Should serve about 3-4 average portions Mock Oriental Soup: My recipe 3 Packages of Oriental Ramen 1/2 bag of Stir fry frozen veggies 1tsp Lemon pepper seasoning 1 Tomato (Optional)Pork, beef or other meat (Optional)Start by cutting your meat in thin, long strips or small bite size cubes and start to fry on medium heat until done the way you want. Thaw and boil the Stir fry veggies and cut tomato into slices, but not too thin. Boil your ramen noodles without packets (for now). When noodles are halfway cooked: add the vegetables, tomato and seasoning. Add your meat if you've cooked it. Mix it all up, make sure everything is warm and dish up with the Lemon pepper sprinkled on top. ----------------------------- Should serve about 4 average portions. Mom’s Breakfast Casserole 6 medium potatoes 1 medium onion 1 pound Jimmy Dean tube sausage 4 T butter Cook sausage in a pan and set aside. Wash, peel and cut potato into bite size pieces. Chop the onion. Layer ingredients in a baking pan like Lasagna. The last layer should be the sausage. Add a little butter on top and foil the pan. Bake at 325 or until potatoes are tender. About 1 ½ hours Top with shredded cheese and let melt. Serve. ----------------------------- Should serve about 5 average portions. Hearty Rice Skillet(Not sure where I got this one) 1 15-ounce can kidney beans, rinsed and drained (or black or garbanzo beans) 1 14 1-2 ounce can stewed tomatoes, cut up 2 cups loose-pack frozen mixed vegetables 1 cup water 3/4 cups quick-cooking brown rice 1/2 teaspoon thyme, crushed Several dashes Tabasco sauce (optional) 1 10 3/4 ounce can condensed tomato soup 1/2 cup Shredded cheese In a large skillet stir together beans, undrained tomatoes, vegetables, water, uncooked rice, thyme, and Tabasco sauce. Bring to a boil; reduce heat. Cover and simmer for 12-14 minutes or till rice is tender. Stir in tomato soup; heat through. Put in bowls and sprinkle with cheese. ----------------------------- I may add more later, but lately it's been exhausting with my new job and all that going on. Soo...what recipes do you guys have that you love? |

my favorite recipes of late
Chocolate Chip Zucchini Bread eggs 4 cups sugar 2 cups olive oil 5 cups shredded zucchini 6 cups flour 2 teaspoons baking soda 1 teaspoon baking powder a pinch of salt a pinch of cinnamon a tad of vanilla 1 large bag of dark chocolate chips Preheat oven to 325 degrees. Beat together eggs, sugar and oil. Add zucchini and remaining ingredients, mixing well. Bake in 4 well-greased loaf pans for about one hour. Freezes well, if there's any left after your family goes through the kitchen. |

Oh my god...that sounds so good! I love zucchini bread and this...takes it one step further! I definately am going to try that one!

As an aspiring chef, I'm in culinary school, you would exspect most of my recipies would be by famous people but my all time fav is one i made on my own for meatloaf.
Meatloaf 1 1/2 lbs. Ground Beef 1 cup your choice of diced mixed fresh veggies Set 1: 1 cup Bread Crumbs Unseasoned 1 Tbsp Cinnamon 1/2 Tbsp Garlic Powder 1/2 Tbsp Onion Powder 1 tsp Sugar 1 tsp Brown Sugar Set 2: 1/4 cup Worcestershire Sauce 1/4 cup Malt Vinegar 2 Tbsp Liquid Smoke 2 Tbsp Soy Sauce A pinch each of Sage, Rosemary, Thyme, and Pepper Combine Set 1 ingredients in a large bowl and let sit. Combine Set 2 ingredients and refrigerate for at least 20 min. Mix Set 1 with the ground beef until well blended. Remove Set 2 from the fridge and mix in with beef and Set 1 until the mixture is moist and well blended. Mix in veggies again until well blended Grease a baking sheet and shape mixture into a loaf shape and coat with bread crumbs. Bake in a 350 degree oven. For about 50 min. or until loaf reaches 160 degrees internally. Let sit for 5 minutes after cooking to cool and set. Cut into about inch thick slices and enjoy! It's great cold on sandwiches!

I don't really cook from recipes, other then baking..but I wanted to mention that I love throwing choc chips into breads like zucchini bread, too!! About 6 years ago I made everyone at work loaves of banana choc chip bread and pumpkin choc chip bread-everyone loved it!

i wouldnt call it my favorite but its definatley a good go to recipe for when youre in a hurry and on a budget
![]() chicken and dumpins 2 cans swanson's chicken broth 2 cans tysons chicken breast 2 cans refridgerator biscuits 1/4 cup chives salt and pepper to taste bring broth and both cans chicken to a boil in a covered pot. open fridge biscuits and roll into balls-then flatten. slowly add biscuits to boiling broth. let sit for 10 min. stir. simmer for 5 mins. season as you like. done! its yummy, its hardy,its cheap and it take like 20 mins. tops! i usually serve with green beans or carrots. i make my carrots with sugar and butter and my green beans with bacon fat. so. yes. it is delicious |

This recipe reminded me of what a friend of mine did...She made drop dumplings from scratch...she altered the recipe slightly and started simmering some kind of pie fillings, like strawberry and blueberry types...That was the best type of dessert ever. I need to see if i have that recipe written down somewhere. Lol. My house is such a disaster with random (but orderly!) piles of magazine pages with bazillions of recipes...Somewhere in there should be the recipe. Somewhere!

Here is one of my very favorites..measurements are not exact..but it's hard to ruin
Pasta ( sorry I don't really have a name for it) Bring a large pot of salted water to boil, add 3 -4 bunches of brocclini (baby brocc) and blanch for 1 minute Meanwhile Saute some garlic ( I love garlic so I use about 6 cloves) in olive oil in a skillet (large) When Broccolini is done use a spider to remove it from water and drain well..then into the skillet with it (becareful not to overcook it, it should be tender-crisp) Do not throw out the water! Then dump a large package of FRESH tortellini (20 oz) into the still boiling water and cook according to directions (usually 7 - 9 minutes) Meanwhile Add some red pepper flakes to the skillet Drain a 10 oz jar of sun dried tomatoes, cut 'em up and add to skillet When pasta is done add to skillet and sort of mix around..add acouple of tablespoons of butter Top with parmesan cheese and eat...
