Butter Caramel Fruit Salad
1. Melt 1 stick of butter in a large skillet on low heat 2. Add 1/4 C or so brown sugar and dissolve into butter 3. Chop up/ slice and stir in: apples, peaches, strawberries, blueberries-leave these whole- and bananas (1/2 to 1 C of each) making sure that bananas are only in for a few minutes so they don't get mushy. 3. Serve warm on its own or with cake, whipped topping, or ice cream (or all three) ** measures are not precise. Adjust as needed.

Strawberries [ DELUSCIOUS ] are best eaten, big and ripe and with the sun still on them as you shuffle down on your bum amongst the straw beds they are planted on and I usually eat 3 for every one that makes its way into the farm shop's punnet !!
But there will always be some around that have not heard that they are meant to be ripe, juicy and sweet, and so continue to be boring, plastic and tasteless and these guys need a bit of help. So here is a recipe for the very English ETON MESS This is a dish traditionally served at the picnic on the playing fields after the annual prizegiving at the Public school. Ingredients: STRAWBERRIES, CREAM AND MERINGUES Prep: 10 min plus chilling 800g fresh ripe strawberries Kirsch, berry liqueur or Cointreau to taste 1 tbsp icing sugar, sifted 200g fresh cream for whipping 200g thick Greek-style yoghurt 6 plain meringues or meringue shells METHOD Wash and dry the strawberries, then hull them. If they are large, cut in half or cut into thick slices. Place all but 200g of strawberries in a bowl and sprinkle with 2tbsp of liqueur. Dust with icing sugar and chill for an hour or two. Whiz the remaining 200g of berries into a purée, adding a dash of liqueur to taste, and chill. Whip the cream lightly, fold in the yoghurt, and chill. Roughly crush the meringues into bite-sized pieces. When you are ready to serve, gently toss the cream, meringue and strawberries and pile the lot into a glass bowl. Drizzle with the strawberry purée. Toss once and then serve. Enjoy!! |

Yes RD, you got it....wish I could do those linky things right in the text box....I can't usually be bothered to do the recipe properly so just chuck the key ingredients together minus the making puree bit.....too much like cooking for me !

This is not an entry...I saw it on Food Network once and have always meant to make it, but never got around to it. More of an idea than a recipe. Strawberry Bruschetta Appetizers Ricotta mix: Mix up a container of ricotta cheese with some cinnamon and honey, and fresh lemon zest till smooth and spreadable. Toast or grill slices of cinnamon raisin bread (hearty artisan type preffered) Smear each slice of toast with a healthy glob of the ricotta mix, then top with freshly chopped strawberries (combined with a little fresh chopped mint). Drizzle with honey, and devour! |

My dad LOVES berries, and we make this for family get togethers over the summer ALL the time. It's actually something we used to make in girl scouts
![]() Berry Pizza 1. Roll out a sugar cookie dough so it's flat, like those giant cookies or a "pizza" and bake it. 2. After it's out let it cool COMPLETLY (I mean it. no heat at all.) and add a mixture of 1 normal size tub of cool whip, 1 8 oz package of cream cheese and a quarter cup of sugar beaten together to the top of it. 3. Arrange with berries We usually use blackberries, strawberries and blueberries and play with the colors. We also add random kiwi sometimes? haha. It's so good, and serve it cold so it's nice and summery ![]()

I dont know if this really counts but anyways. Here is my entry:
BERRY FRENCH Serving for one person ( I am a very lonely person) 4 slices of Cranberry Bread ( if you cant find it use cinnamon raisin bread) 7 Strawberries cut in half ( if you like you can add other berries) 1/2 cup of sugar 1/2 stick of butter or 5 tbsp. of whipped butter ( I love the taste of whipped butter) Whipped cream or whipped topping which ever you desire. 2 eggs 4 tbsp of heavy cream 1/2 teaspoon of Vanilla extract and Cinnamon 1 tablespoon of brown sugar In a small pot add the strawberries, sugar and 1 cup of water. Let it boil once it start boiling lower the heat to medium low and let it simmer. Stir every 2 minutes until the sauce have become bright red and thick but not to think. It need to be like a light syrup. I say about 7 to 10 minutes, then turn it off. While that simmers you can start the french toast. In a bowl add the two eggs, heavy cream, cinnamon, vanilla extract, and a tablespoon of brown sugar. Beat everything until it is well mixed. Add table spoon of butter to a frying pan. Let it melt in medium heat. Start socking the bread in the egg mixture. I like to turn the bread twice. Soak it twice in each side about 2 second a side. Then drop the slide of bread into the butter. I like to do two at a time. Grill until toast is a little hard and it has browned. Take them off the pan and place in a plate. Repeat add the butter, soak the bread and grill until is toasted. Take the two French toast that all ready done and spread a thin layer of butter on each. Once they are all done stack them as you please. I like cutting them in half and stack them like they do in ihop. lol Add the strawberries and the syrup on top the toast while is still hot. Then add whipped cream and Voila! Berry French Toast lol!
