    Here's a quick, simple one that I throw together a lot ... Nuke chopped frozen broccoli and/or spinach, toss it with a little Alfredo sauce, and use it to stuff a basic cheese omelette. Then top the concoction with lemon pepper, chives, and sauteed fresh mushrooms.
