    Oh, how I love eggplant. I hadn't ever thought about rolling it up. That's brilliant. I like to put it in my burrito filling with zucchini, summer squash, and onion. I never use recipes, either. No worries. :)

    You can add a bit of thickener (constarch or sifted flour) to fat free milk and it should work the same.
