    Well it's true, absent an observer objects can't be described as having any colour as there is nobody to define what that colour is; now it's objectively true that different objects reflect different wavelengths but how those wavelengths are perceived and defined depends entirely on the observer.

    Well technically it isn't; our eyes only perceive it as blue just as our eyes perceive grass as green, if our eyes were different in any way (colourblind or able to sense wavelengths outside the visible spectrum) the sky wouldn't be blue and grass wouldn't be green.
