What Are You Listening To? Redux

Dead Kennedys live at the deaf club, the whole album, too good to pick 1 song

    What are you making?

Yesterday, I slow cooked some beef skirt with garlic and cayenne pepper in chicken stock. Left it overnight (it will only improve) and tonight I'm making Roast Beef Po Boys. This is me and my wife's favourite sandwich now. I try to be as authentic as possible, French bread, mayonnaise, shredded...

    March Iron Foodee Challenge

Firstly, what is a dutch oven? Is it another name for casserole? Your version is much better than the version we knew as children. They never used to brown the meat, so everything looked grey and horrible. Never seen a version with cider before, some use stout, think I may try this and...

There was a good article this week in The Guardian on the wonders of stout; proof there is much more than just Guinness: http://www.guardian.co.uk/lifeandstyle/2011/mar/12/beer-stout-review?INTCMP=SRCH After a night on the black stuff, the important thing the next day is a Full...

    March Iron Foodee Challenge

There's a stew made in Liverpool called Scouse. Some versions use lamb and beef, the breast of lamb and shin of beef. Breast of lamb is incredibly cheap but very fatty, use third of this to 2 thirds shin, this way you get the sweet taste of lamb with th meatiness of beef.

    March Iron Foodee Challenge

It's 1 thing we do have a lot round here (butchers, not psychos). Unfortunately lots of people use supermarkets now. I'd hate to see them die out. You'd normally see corned beef tinned, usually from Argentina. It's pre-cooked and only good for corned beef hash. I'm going to speak to my butcher...

What form does your corned beef come in? Is it tinned or do you buy it brined from the butcher?

Have you tried adding the broth to the roux instead? this should mix in easier.

    March Iron Foodee Challenge

This is quite a basic recipe, but tasty as hell. It was my Grandpa's favourite recipe and we had it whenever he came over to England. Boiled bacon and cabbage Depending on what you can buy; gammon, bacon chops, ham knuckle etc. Stock veg - 2 carrots, 2 sticks celery, 2 leeks, 2 onions, 2...

    cravings and food combinations

I love hot, sweet & sour. If I've got the munchies bad, I spread Tallegio cheese on crackers and top it with jalapeno peppers and home made chilli jam. The sourness of the Tallegio with the spicy chillies is amazing, and then balanced with the sweetness of the chilli jam. :eat2:

I'm fairly sure coriander seed is from the same plant. It has a totally different flavour, very floral. You dry fry and grind it and add it to Moroccan and Indian food.

Gutted somebody has already taken the name, it'll have to do for now. The reason I've used the name is because if you do all the cooking from natural ingredients, you can taste the difference and it works out cheaper. As well as using cheaper cuts of meat, which need a bit more work, but can...

Cheers for that, wasn't sure of the rules. This is my blog address: http://frugalfoodee.blogspot.com/ It is in the first stages so I could really do with some critical feedback. One worry is that I wrote it from the mind of a chef, is it too long winded or not enough description? Also do I...

I've started a new food blog and could really do with some opinions on it. Am I able to advertise it here or will I get kicked off. I'll leave the name out until I know it's cool. It's non-profit, just a collection of the recipes out of my head onto hard copy. The plan 1 day is to turn it...

What Are You EATING right now?

Left overs from Saturdays Mexican. Tortilla wraps with Guacamole, grated Lancashire cheese and pickled vegetables. Spicy, creamy and balanced with the acidic bite of the vegetables. Didn't have any of the chicken left, but it was still tasty as hell. Washed down with a big glass of water, heavy...
