So, like many of you foodies, I have accumulated a bunch of items in my pantry and freezer that I need to use up before spring starts. I love cooking with fresh ingredients during that time, and I have so many grains and frozen stuff that I would hate to see go to waste.

I'm usually a once a week gocery shopper. However, I'm giving myself a bit of a foodie challenge for a while....no grocery shopping until the pantry and freezer are used up! I will allow myself an exception here and there....like an onion, an egg, or broth...those kind of things. But, ladies and gentlemen, I am officially on a mission to do a bit of spring cleaning in the kitchen! (and hopefully save a bit of $$ as well!).

Right now I have:
Freezer:
frozen chopped spinach
asian stir fry veggies
bag of frozen shrimp
thin mint cookies

Pantry:
all purpose flour
bread crumbs
arborio rice
brown basmati rice
whole wheat spaghetti
butternut squash puree
falafel mix
mac and cheese (box)

I would welcome any ideas on how to use this stuff up creatively. If you're in the same boat...why not join? I intend to chonicle my dinners, at least, with photos!

It should be an interesting week!
