Hello everyone! I am so excited that I get to pick an ingredient for the challenge. I decided that I would choose SPINACH. It is one of my favorite vegetables. It is very versatile and can be eaten, hot or cold, fresh or frozen. And I suppose if you are Popeye, canned.

There are many ways to include SPINACH as the highlight of a dish. Please share your recipes with us. Thanks!
