I've got loads and loads of apricots on the tree this year, and I'm looking for unusual jam or other preserving recipes.

So far I've made:

Apricot Jam
Apricot Butter
Apricot Pineapple Jam
Apricot Blueberry Jam
Apricot Strawberry Jam
Apricot Jalapeno Jam
Apricot Syrup
Regular old canned apricots
Dried apricots (lots and lots of 'em...)
Frozen apricots for use with smoothies and other recipes later.

Am I misssing something?
There's gotta be something else I can make before the unusually heavy production is over. Any ideas?

Oh, and I've tried chutneys in previous years, but eh, not my cup o' tea and I couldn't convince anyone else that it was good either.
