Title: Dom Deluise's - You'll Just Love Mama's Chicken

Yield: 1 Servings

Ingredients

2 chicken, cut up and skinned
1 c lemon juice
1 onion, chopped
2 c seasoned bread crumbs
2 ts cheese, grated
1 olive oil
1 parsley

Instructions

Place chicken pieces in a bowl with the lemon juice. In a medium brown
paper bag, put in flavored bread crumbs, grated cheese and parsley.
Shake slightly to mix. Put three pieces of chicken into the bag at a
time and shave to coat thoroughly. Put the chicken pieces in a
baking pan with the onion. Sprinkle with pepper and drizzle with a
little olive oil. Bake at 350 degree for 1 hour. To serve, squeeze a
little lemon juice over chicken and garnish with lemon slice,
parsley, and a little grated cheese.

Title: Dom Deluise's Cheese And Onion Bread

Yield: 8 Servings

Ingredients

1 1/2 c onion, chopped
1 egg
2 tb butter
1/2 c sour cream
1 pepper, to taste
2 c flour
1 tb baking powder
1/4 c butter
1 c cheddar, shredded
2/3 c milk
3 tb fresh parsley, minced

Instructions

Saute onion in 2Tb butter until tender. In a bowl, combine onions with
egg, sour cream and pepper. Mix well; set aside. Add flour and baking
powder to another bowl. Cut in 1/4 cup butter until crumbly and fine. Stir
in half the cheese. Add milk to make soft dough. Pat into a buttered 9"
square pan. Spread sour cream mixture on top. Sprinkle with remaining
cheese & parsley. Bake in oven at 425 for 25 minutes. Cut into square and
serve warm.

Title: Dom Deluise's Outrageous Yum Yum Cake

Yield: 1

Ingredients

------------------------------CAKE------------------------------------
2 c flour; sifted
1 tb baking powder
1/2 ts baking soda
2 c sugar
1 lg egg
1/2 c unsalted butter; room temp
1 c sour cream
1/2 c water
2 ts vanilla
1/2 c cocoa + 2 tbls
12 oz semi sweet chocolate chips

------------------CHOCOLATE BUTTER ICING---------------------------
6 oz semi sweet chocolate chips
3 tb strong coffee
3/4 c unsalted butter; soften

Instructions

Preheat oven to 350~. Sift flour, baking powder and baking soda on
waxed paper. Butter and flour two 9" cake pans. In large mixing bowl,
beat sugar and egg until sugar is dissolved. Add butter and mix into
egg mixture. Add sour cream, water and vanilla; b Frost.

CHOCOLATE BUTTER ICING: In a small saucepan, melt chocolate chips in
the coffee over very low heat. Remove pan from heat. Beat in butter, 1
tbls at a time, until smooth. Set pan in bowl of ice and beat until
icing is spreadable and holds its shape.

Dom’s Mashed Sweet Potatoes

3 pounds sweet potatoes, peeled and cut into chunks
½ stick butter
1 banana, sliced
1 orange, zested and juiced
1 cup chicken stock
½ cup brown sugar
½ teaspoon grated nutmeg
Salt and pepper

Boil potatoes until tender, drain and reserve. Return the pot to the stove top over medium heat. Add butter and bananas to the pot. Cook bananas 5 minutes and add the juice of 1 orange to the pot, reserve the zest. Allow the juice to cook out, 1 minute. Add potatoes to the pot and the stock and sugar. Mash potatoes, banana, stock and sugar together until well combined. Season with nutmeg, salt, pepper and orange zest, to your taste. Mash to combine spices and serve.

Ingredients Convert Measures
1 (18.25 oz) package devil's food cake mix
1 (3.9 oz) package instant chocolate pudding mix
1 (16 oz) container sour cream
1 cup melted butter
5 eggs
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 (12 oz) package semisweet mini chocolate chips
Directions
Preheat oven to 350 degrees F (175 degrees C). Generously grease a 10 inch Bundt pan.
In a large bowl, stir together cake mix and pudding mix.
Make a well in the center and pour in sour cream, melted butter, eggs and extracts.
Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed.
Blend in chocolate chips. Pour batter into prepared pan.
Bake in preheated oven for 50 to 55 minutes.
Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
