Side dishes

I looked and couldn't find a thread. I need some creative side dishes.

The problem: Rob is uber picky and doesn't liked cooked vegetables. Me..I could eat them until the cows come home..but don't need to cook a lot because I hate leftovers.

Anyone have any go to dishes?

I've been there and don't understand those people ;) . maybe he grew up with overdone veggies or just canned ones. that would make anyone into a vegetable hater! does he like salads? you can always make them taste better by slicing vegetables into tiny bits and adding cheese. how about hiding vegetables in soup?

roasted cauliflower is delicious as well. it gives it a nutty flavor.

I'm not a huge fan of cooked veggies either. It depends on the vegetable of course, but most I'd rather have raw. I like to cut up peppers, mushrooms, cucumbers and celery (I'd throw in tomatoes if I could eat them) and toss it with some greek dressing and feta cheese. Yummy.

I often have no sugar added applesauce as a side dish or even just drink V-8 with dinner so I can get some fruits/veggies in. And not the tomato V-8. I like the fruit one...mango I think? Is my favorite.
