Sweaty Cheese

I know the term sounds gross, but does anyone else think that sliced cheese (cheddar, pepper jack, etc) that has been sitting out on a tray at a party all night is THE best cheese? It's room temperature and has been that way for hours. It's got beads of cheese "sweat" on it.
I find it to be the smoothest, creamiest cheese.
