this is one I found a few months back and I make it all the time, I'm bringing it tomorrow for everyone to enjoy!! The old man loves it. You can omit the carrots if you want.
Maple Mashed Sweet Potatoes
1 pound sweet potatoes, peeled and cut into 2-inch chunks
2 medium carrots, thinly sliced
2 tablespoons maple syrup(I use sugar free)
Pinch of ground nutmeg
Freshly ground black pepper
Place the sweet potatoes and carrots in a medium saucepan. Add 1-inch water, cover, and bring to a boil over high heat. Reduce the heat to medium and simmer for 9 to 10 minutes, or until the vegetables are very tender.
Drain in a colander and return to the saucepan. Mash until smooth. Stir in the maple syrup and nutmeg and pepper to taste
1 8 ounce package Cream Cheese, softened 1 40 ounce can Sweet Potatoes ¼ cup packed brown sugar ¼ teaspoon cinnamon 1 cup chopped apple 2/3 cup chopped cranberries ½ cup flour ½ cup old fashioned oatmeal, uncooked ½ cup packed brown sugar 1/3 cup butter ¼ cup chopped pecans
Preheat oven to 350 degrees
1.Beat cream cheese, potatoes, ¼ cup brown sugar and cinnamon in large mixing bowl at medium speed with electric mixer until blended. 2.Spoon potato mixture into 1½ quart casserole or 10 X 6 baking dish. Top with apples and cranberries. 3.Stir together flour, oats, and ½ cup brown sugar in new mixing bowl. Cut in butter until mixture is crumbly. Stir in pecans. Sprinkle over fruit. 4.Bake 35 40 minutes or until thoroughly heated.
