I won't celebrate Halloween. I never did, and probably I will never have the chance to do it. However, I wanted to celebrate my 1000th post with a new thread, inviting you to enhance the posts with the recipes you will prepare for Halloween. The main ingredients, predictably, is PUMPKIN. I'll post the videos on Youtube for Monday, but for now. Here's the recipes! Have an happy halloween!

PENNETTE ZUCCA E ZOLA (4 servings)

INGREDIENTI
Pennette (Short Pasta) – 12 ounces
Pumpkin – 14 ounces
Gorgonzola – 7 ounces
Speck /Sudtirol smoked ham, or simple ham – 5 ounces
Oil
Butter – 0,7 ounces
Salt
Pepper

PREPARATION:
- Skin the Pumpkin. Eliminate the seeds and clean it;
- Dice it and cook them in hot water, without salt, for 5 minutes
- Dry it and place them on a cotton sheet, so they can get dried
- Cut the speck, the same size of the pumpkin dices. Put them in a pan with oil, cook for 5 minutes, then reduce the fire and let them cook for 10 minutes
- Cut the Gorgonzola in pieces. Put them in the butter and melt it at Bain-marie until you’ll obtain a cream.
- Add pumpkin and ham.
- Cook the pasta, strain it and pour it in a pot together with the sauce. Mix and serve. Add Parmesan, if you want.

PORK AND PUMPKIN DICES (4 servings)

INGREDIENTS

Pork Tenderloin – 17,6 ounces
Pumpkin – 7 ounces
Juniper berries – 3 berries
1 Garlic Gore
½ glass of white wine
1 coffee spoon of brown sugar
1 coffee spoon of minced parsley
Butter – 0,7 ounces
Vegetables Broth – 0,8 gallons
Salt

PREPARATION
- Cut the Tenderloin in dices.
- Smash the Juniper berries with the skinned garlic, and fry them in butter.
- Add the meat and mix, to cook it on each side.
- Add the pumpkin cut in dices, the same dimension of the meat. Pour the sugar on it, and, when it’s evaporated, add the boiling broth.
- Adjust with the salt, lower the flame and cook, covered, for 30 minutes. Dust with parsley and serve.

PUMPKIN MUFFINS

INGREDIENTS

Butter – 7 ounces
Flour – 5,3 ounces
Nutmeg – 1 dust
Sugar – 1,8 ounces
Cinnamon – 1 coffee spoon
Milk – 0,26 gallons
Oil – 2 spoons
Powdered Sugar – 10,5 ounces
Sugar grains – 1 box
Chemical yeast – 1 coffee spoon
Pumpkin – 10,5 ounces

PREPARATION
- Clean the pumpkin, cut it and cook with steam for 15 minutes.
- Once ready, mash the pumpkin to obtain a cream.
- Mix the flour, the sugar, a little salt, yeast, cinnamon and nutmeg.
- Add milk, oil and pumpkin, mixing to obtain a smooth dough.
- Put the dough in a muffin pan, and fill 2/3 of the form with the dough.
- Warm the oven at 200°C for 20 minutes, so they inflate and will be coloured.
- In the meantime, prepare the glaze, melting the butter, and adding the powdered sugar.
- Mix the compound, to obtain a smooth white glaze.
- Take the muffin out of the oven, and brush the glaze on them, dusting with the sugar grains.
- Serve them once they are still warm.
