Found myself with three rapidly aging bananas. Rather than chuck 'em, I decided to put them to good use, flying solo with no instructor, late last night.
I assembled:
3 mashed bananas
1 cup whole wheat (white) flour
2 tblspns canola oil
Handful of raisins
Dash of maple syrup
Capful vanilla
Teaspoon baking soda
Pinch of salt
Dash ground cloves
Bigger dash cinnamon
Beat the mixture up, poured it into muffin tins, sprinkled vegan chocolate chips over 3 of them just as an experiment, baked at 350 for 10 minutes. Checked it at ten, still jiggly (ALTHOUGH I LIKE JIGGLY THINGS) and so popped it in for another 6 minutes.
Yanked 'em out, let 'em cool, and great balls of fire, they were gone in 60 seconds by appreciative pals.
(I snuck one away for today's breakfast, though...)
Total time for assembly--less than 5 minutes.
