Made last night, in honor of the Mrs.' return from the midwest.
Chewy in the middle, crunchy on the outside, yes, yes, yes...
2 cups flour (I used Whole Wheat)
1 teaspoon baking soda
1/4 teaspoon salt
2 and 1/2 tablespoons ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 cup canola or vegetable oil
1/4 cup molasses
1/4 cup soy milk
1 cup sugar (I used raw)
1 teaspoon vanilla
Combine dry ingredients, either by hand or by sifter, into a bowl.
Combine wet ingredients and dump dry ingredients over 'em.
Mix with your paws, and if the batter is too dry, and mine was, add a little more soy milk or even water.
Roll dough into little balls and flatten to your satisfaction onto a greased cookie sheet.
Final step for extra credit: sprinkle coarse sugar on top of the cookies.
Bake 12 minutes at 350 degrees.
