I love tacos, and can eat them seemingly forever without getting too full. I like to make a big pot of seasoned meat and beans and live on tacos for a few days, with tortilla chips, some soft tacos and maybe a taco salad mixed in for variety. But the crunchy tacos are what I just can't get enough of. I put the meat mixture, green leaf lettuce, chopped tomatoes, grated cheese and sour cream all in separate bowls, warm up a bunch of shells and assemble each one just before I eat it, so the shell is always fresh and crisp, never soggy. Delicious, and even reasonably healthy. :eat1:
