I have received a large quantity of habanero peppers. A family member purchased serrano and jalapeno pepper plants at the beginning of the season and got six habanero plants by mistake.

I'm going to process the peppers into sauce, but I'm not quite sure if I'm going to prepare a mash to cure like Tabasco does with their peppers, or make a pepper relish and bottle it.

I think the relish would be too hot for anything other than cleaning car battery terminals. So i'm leaning towards the mash.

Thoughts?
