Hi all,

I just wanted to share something I made for our new years party. It was a huge hit and I thought some fellow foodies would enjoy it too! I'm making it again this weekend. I only got one sandwich last time and have been craving it since. I hope you like it! :eat1:


Kalua Pulled Pork
---------------

* 1 (7 pound) pork butt roast
* 1 1/2 tablespoons Hawaiian sea salt
* 1 tablespoon liquid smoke flavoring (don't overdo this. a little goes a long way!)

1. Pierce pork all over with a carving fork. Rub salt then liquid smoke over meat. Place roast in a slow cooker.
2. Cover, and cook in Crockpot on LOW for 20 hours, turning once during cooking time. (This sounds like a ridiculously large amount of time, but this is how long real Kalua pork takes, and when it's done and just falling apart but still so moist, you'll be a believer :eat2: )
3. Remove meat from slow cooker, and shred.

Teriyaki BBQ Sauce
------------------------

* 2/3 cup pineapple juice from 16 oz can of pineapple slices (set pineapple slices aside)
* 1/2 cup teriyaki sauce
* 1/2 cup ketchup
* 2 garlic cloves, minced
* 2 tablespoon brown sugar, firmly packed
* 2 tablespoon ginger, minced
* 1 tablespoon rice wine vinigar


1. Heat in sauce pan over medium heat for 10 minutes

Hawaiian Coleslaw
------------------------

* 3/4 cup mayonnaise
* 1/4 cup Dijon mustard
* 1/4 cup packed light brown sugar
* 2 tablespoons rice wine vinegar
* 1 teaspoon salt
* 1/4 teaspoon freshly ground black pepper
* 6 cups shredded green cabbage (about 1 head cabbage)
* 1 green bell pepper, finely diced
* 1 large carrot, peeled and shredded
* 1/2 cup grated yellow onion
* 8 oz can of crushed pineapple, drained
* 3/4 cup sweetened shredded coconut

1. Mix everything except the fruit and vegetables in a large bowl.
2. Add everything else.
3. Refrigerate for a couple hours before serving.

Server on toasted kaiser buns topped with the bbq sauce, coleslaw and grilled bbq slices. Enjoy!
